I'd like to think this is for birdwatching, but that is incredibly unlikely. It is far more likely to be a shooting hide, although what they might be shooting I have no idea. In Germany these would be used for both boar and Geese. Escaped wild boar have not been reported in these parts, and Geese are not common enough for hunting infrastructure. I suppose that leaves Deer, which are quite likely to make their way along the water way into and out of the wood.
